If you are like me, you enjoy being creative with leftovers. I made these petite pork sandwiches a couple of days after I made the crockpot ribs (click here for recipe) and have just gotten around to submitting a post. Since I used boneless ribs, it was easy to pull the pork apart. For the bread I used the flat bread I bought from Costco. Yes, it freezes well! I took it out of the freezer in the morning and by evening it was thawed out. Feel free to use the bread of your choice.
Ingredients
Cooked boneless pork ribs shredded or pulled apart (click here for ribs recipe)
One quarter flat bread/4 small burger buns
2 tablespoons olive oil
Directions
Heat grill pan
Cut flat bread into four pieces and slice each piece in half
Spread olive oil on each side of sliced flat bread and place on grill, olive oil side down
Grill bread until lightly brown grill marks are visible
Remove bread from grill pan
Reheat pork, pull apart with a fork. Place about two tablespoons of pulled pork on top of one side of the bread, add about a tablespoon of barbecue sauce (you should have some sauce from the barbecue pork) on top of pork place other half of bread on top and voila, you are ready to indulge!
