You know sometimes you have a great recipe and really don’t have much to say about it. That was me today. It’s grilling season and while the protein tends to reign supreme this time of the year, I am all about the sides. I came up with this dish while trying to figure out what to do with some potatoes that I had on hand. Potato salad perhaps? Mashed potatoes maybe? Baked potatoes meh…I was not feeling any of it. I decided instead to do a boil and fry and boy was I happy with that decision. They turned out awesome!
Ingredients
4 medium sized potatoes, peeled and quartered
2 Tbsp green seasoning
2 cloves garlic chopped
1 Tbsp butter
½ tsp salt
3 Tbsp oil for frying
Directions
Place potatoes in a pot, cover with water, add salt and boil until potatoes are tender, about 15 minutes. Alternatively, place in a microwave proof dish and cook in microwave for a total of 6 minutes. Stirring after 3 minutes
Heat oil in frying pan
Drain potatoes, add to frying pan and cook until golden brown. This can be done in batches. Place fried potatoes in a dish
Melt butter in a separate skillet, add garlic and green seasoning
Pour green seasoning and butter mixture over potatoes, toss lightly and serve
Note: if you don’t have any green seasoning handy finely chop a few of your favorite herbs, add a little pepper and you should be good to go
